How can you eat young stag meat ?


Stag meat is lean (see table below), rich in proteins and with a low calorie rate ; a real chance for people who are on a diet !

A few suggestions


Roasting meat
  • « normal » way : in the oven, like a beef roast, with some butter nuts and shallots.
  • « hunter » way : leave to marinade a few hours, then cooked and coated with Grand veneur sauce (specific for large game) or pepper sauce.

Ribs and steaks
  • To cook in a pan, 3 minutes on each side ; coat with Grand veneur sauce, pepper sauce or simply with chopped shallots.
Stews
  • Slow cooking, following traditional recipes.

Cooked roasts
  • Reheat the roast 10 minutes in the oven, coated with its sauce (also reheated 8 minutes) and serve with french fries.
