A few suggestions
Roasting meat
- « normal » way : in the oven, like a beef roast, with some
butter nuts and shallots.
- « hunter » way : leave to marinade a few hours, then cooked
and coated with Grand veneur sauce
(specific
for large game) or pepper sauce.
Ribs and steaks
- To cook in a pan, 3 minutes on each side
; coat with Grand veneur sauce, pepper sauce
or simply with chopped shallots.
Stews
- Slow cooking, following traditional recipes.
Cooked roasts
- Reheat the roast 10 minutes in the oven,
coated with its sauce (also reheated 8 minutes)
and serve with french fries.
